Easy Prosciutto Stuffed California Dates

Did you know that dates are an excellent and healthy sugar substitute? These beauties are naturally sweet with a lower glycemic index than sugar plus they're full of fiber, nutrients, antioxidants and polyphenols to diets.


They are a perfect snack as is or a fun ingredient to recipes. One of my favorite ways to snack on them is to stuff them! I use California dates because they're plump and full of flavor. There's so many different ways to enjoy stuffed date snacks. I love a sweet and salty profile so I wrap mine with prosciutto and other toppings I have in the pantry. Plus, they come out so pretty that they're perfect for hosting parties!


Dates fit into several different eating plans such as: Paleo, Mediterranean Diet, Whole 30 Plan, DASH Diet, Whole Foods Plant Based Diet and more. Start snacking healthier and grab yourself a California Date!

 

Servings Up to You!, Approx. 10-15 mins


What You'll Need

  • California Dates with the Pit, pitted (they're more 'meaty' bought with the pit)

  • Mascarpone, Goat Cheese, Ricotta or Cream Cheese, room temperature (leave out of the fridge for 15-20 mins makes it easier to spread)

  • Fresh Thyme

  • Pistachios, chopped

  • Semi-Sweetened Chocolate, melted

  • Prosciutto

  • Olive Oil


All You Need To Do

  1. Preheat oven to 425° F.

  2. Pit all of you dates.

  3. Use a spoon to stuff the dates with a generous slather of cheese and pinch the date closed.

  4. Cut your prosciutto into 1in wide strips and wrap each stuffed date.

  5. Place on a parchment paper lined sheet.

  6. Lightly brush olive oil on the top of each date.

  7. Sprinkle fresh thyme over each date.

  8. Bake for 8-10 mins until the cheese is melted and your prosciutto is slightly crispy.

  9. Remove from oven and let it cool for 3-5 mins.

  10. Drizzle on chocolate.

  11. Sprinkle on pistachios before the chocolate melts.

  12. Enjoy!
