Easy Oven Roasted Veggies with California Dates

Looking for a quick and easy side dish that only needs minimal ingredients and minutes to prep? Then this recipe is the one for you. Just toss in a few ingredients, toss and pop it in the oven.


Throw in some bright color veggies and you'll have a gorgeous dish to serve at your next holiday meal! But what sets this dish apart from the typical roasted veggie side dish? Is the addition of delicious California Dates. Popping these babies into the oven gives them a delicious caramelized crust that offers a nice sweetness to accompany those crunchy vegetables.


Did you know that dates are an excellent source of vitamin C and D? These vitamins helps with the elasticity of your skin, keeping your skin nice and smooth. If this doesn't get you popping more dates into your mouth as a snack or adding them to your daily dishes, I don't know what will!

What You'll Need

  • Small Bunch of Carrots, peeled

  • ½ Head of Cauliflower, cut into florets (watch my video on how to cut a cauliflower)

  • 4-5 California Dates, pitted and cut into quarters

  • ½ Lemon, sliced thinly

  • 1 tsp Red Pepper Flakes

  • ¼ Cup Herb-Infused Olive Oil (substitute regular olive oil but a flavored one brings out so much more flavor)

  • 2 Tbsp Date Syrup (substitute with maple syrup)

  • 2 Tbsp Parsley, chopped


All You Need To Do

  1. Preheat oven to 425° F.

  2. Prep your veggies and dates.

  3. On a cooking pan, spread out your veggies and dates and drizzle with oil. Mix so that everything is evenly coated with oil.

  4. Add lemon slices.

  5. Drizzle on syrup.

  6. Sprinkle on red pepper flakes.

  7. Place in oven and bake for 20-25 minutes. Stir 2-3 times throughout the cooking time.

  8. Sprinkle with parsley for garnish.

  9. Enjoy!
