Caramelized Grapefruit Fennel Summer Salad

One of my favorite things about the summer time is the abundance of beautiful, vibrant and sweet fruits. And I'm a lover of fruits in my salad. Fresh, dried, dehydrated, you name it, I love it.


I love the different bursts of flavors and textures a great salad can bring. This salad is one of my favorite summer salads and add in some protein and you've got a great meal! The caramelized grapefruit brings out that extra sweetness in the grapefruit that compliments that sour zing so nicely.

The fun thing about salads is that you can make them your own. Toss in your favorite greens, fruits, crispies. The sky's the limit!


 

2 Servings, Approx. 10 min


What You'll Need


For the Caramelized Grapefruit

  • 1 Large Ruby Grapefruit, peeled and sliced

  • 3 Tbsp Brown Sugar, enough to cover the top of each slice (coarse sugar works best)

For the Salad

  • Lettuce

  • Fennel, sliced

  • Avocado, sliced

  • Cucumber, sliced

  • Parmesan, shaved

  • Blackberries

All You Need To Do

  1. Preheat the broiler.

  2. Prepare Caramelized Grapefruit. Spread the grapefruit slices on a baking sheet lined with parchment paper.

  3. Sprinkle each slice with a layer of brown sugar.

  4. Broil for 3-5 minutes or until edges begin to brown.

  5. Set aside to cool 1-2 mins.

  6. Prepare your salad.

  7. Serve and enjoy with your favorite salad dressing. I made a grapefruit vinaigrette to go with mine. Recipe coming soon.
