Sweet + Tangy Scallops with Mango Citrus Salad

I love adding rice vinegar to dishes as it adds a little sweetness and and tangy fun to any dish.


This scallop dish can be prepared and ready in under 30 minutes. I love scallop dishes because they're so easy to prepare and they can be plated so beautifully that if you're hosting a meal for your friends and family, it's so easy to impress them.

Sweet and Tangy Scallops and Marukan Rice Vinegar

Rice vinegar not only tastes great but has numerous health benefits.


It's low in calories, contains amino acits and antioxidants and has been linked to reducing insulin spikes and lower cholesterol levels according to WebMD.


Marukan Rice Vinegar has been a family-owned business since 1649 starting in Kiyosu, Japan. That's 10 generations!


It is a staple in my family's pantry and one of my favorite condiments to use in marinades and salad dressings.


 

2 Serving, Approx. 30 mins


What You'll Need


For the Scallops

  • 6-8 Scallops

  • ¼ Cup Low Sodium Soy Sauce

  • 2 Tbsp Marukan Rice Vinegar

  • 1 Tbsp Honey

  • 1 Tbsp Sesame Oil

  • 1 tsp Cornstarch

  • Salt and Pepper, to taste

  • 2 Tbsp Avocado Oil

For the Salad

  • 1 Honey Mango, diced

  • 1 Small Orange, diced (I used Blood Orange for color and tartness)

  • 1 Shallot, finely chopped

  • 1 tsp Mint, finely chopped

  • 2 tsp Marukan Rice Vinegar

  • ¼ Cup Avocado Oil

  • Salt and Pepper, to taste

All You Need To Do

  1. Prepare the scallops. Mix all of the ingredients together except for the salt, pepper and oil together in a medium bowl.

  2. Add the scallops to the marinade and let it sit for about 10 minutes.

  3. Prepare your salad. Mix all of the ingredients thoroughly together. Place in the refrigerator and allow the fruit to soak up all the dressing.

  4. Heat your cast iron pan on medium high heat. Once the pan is hot add the oil.

  5. Remove the scallops from the marinade (reserve the marainade, DO NOT discard). Sprinkle the scallops with salt and pepper on each side.

  6. Sear the scallop for 3-4 minutes without disturbing it. It should be a nice golden brown.

  7. Sear the other side of the scallop for 2 minutes.

  8. Add half the marinade to the pan to coat the scallops remove the from the pan.

  9. You can add your fruit salad on top of your choice of salad greens or use it as a relish to top your scallops.

  10. To make it extra fancy, top off your scallops with some caviar.

  11. Enjoy!
