Custard Snowskin Mooncake ((冰皮月饼)
The Mid-Autumn Festival, fondly known as the Moon Festival, is a cherished celebration that takes place each year under the radiant full moon of autumn. This vibrant festival brings together East and Southeast Asian communities. During this special time, families gather to enjoy mooncakes, a treat that symbolizes reunion and harmony, decorate and light paper lanterns. This festival holds a special place in my heart, as it embodies the spirit of togetherness, gratitude and celebration. It’s a time to reflect on the beauty of family and the joy of being together, making it one of my favorite times of the year.

Snowskin mooncakes are a delicious no-bake treat that is made with a sweet mochi dough with a paste-like filling such as red bean, white bean, black sesame, custard and more. Once you get the hang of it, it can be such a fun process and yummy treat for you and your family.
Cooking Tips
Dusting Flour. Toasting your dusting flower helps to remove the raw, starchy taste and makes it safer for consumption since this recipe doesn't require baking.
Keep Cooked Dough Covered. When you're not using the cooked dough, make sure you keep it covered with a towel or cling wrap to keep it from drying out and cracking.
Make Ahead. This recipe can be made ahead! Store the covered cooked dough and custard filling in the fridge overnight until you're ready to assemble.
Storage. Place the mooncakes in an airtight container for up to 3-5 days. Let the mooncake return to room temperature before enjoying.
