Happy Lunar New Year's or Tết to us Viets. ❤️

I miss being a kid during Tết. Gathering at Bà ngoại's [grandma] house with our extended families to feast, play games and best of all collect red envelopes!

Bà ngoại always had bánh chưng on the table. A delicious package-like dish made of savory glutinous rice typically filled with pork and mung beans. This one my bà made is vegetarian and filled with mung bean...because she know I don't love the pork in it.

I've been blessed to have my bà make these for me year round and not just on Tết. Someday, I'll make my own but for now, I'll enjoy my Bà ngoại's. ❤️

You're bacon me crazy... ❤️🥓

Bacon is dreamy and irresistible. Unfortunately for my husband, he can't eat pork. So when we got the chance to try out @myforestfoods My Bacon, meatless Bacon, we had to jump on it!

I baked mine into purple sweet potato roses just in time for Valentine's Day 🌹My thoughts...

It did have a hint of Bacon flavor to it! It was a little on the chewier side for Bacon but I love a chewy texture and not surprising as it is mushroom based. I also tried it microwaved which came out extra crispy! But more chip like textured not greasy like it's meat counterpart. 🥓 My verdict...

I'm not quite ready to give up my Bacon quite yet but I do think these make a tasty snack and healthy alternative!

No Bacon Sweet Potato Roses:

🌹 1 Package of My Forest My Bacon
🌹 2 Small Purple Sweet Potatoes, sliced thinly into rounds
🌹 2 Tbsp Avocado Oil
🌹 1/4 tsp Salt & Pepper
🌹 1/4 Garlic Powder

Bake 400°F for 20-25 mins. Garnish with chopped parsley and parmesan and served with maple syrup. Enjoy!

I picked up mine @wholefoods in the tofu fridge!

Lunar New Year's is a few days away! It's one of my favorite times of the year. It's a time for family gatherings, an abundance of food and red envelopes filled with luck.

I'll be honest this year has ramped up to a hectic start and the idea of cooking a full meal for a family gathering gives me anxiety.

@eatinnovasian has a variety of easy to prepare Asian dishes from egg rolls you crispy honey chicken (a kiddo fave). So easy to prep and gives you more time to spend with your loved ones.

Get ready for a full flavor blast! 🍗

@danosseasoning needs to be added to your spice rack pronto. It's so full of flavor and goes so well on not just chicken but veggies too.

It was so good the hubs said he wanted me to season all of our chicken with it from now on.

California Grilled Chicken and Veggies:

🍗 2 Chicken cuts of your choice, I used bone-in, skin-on thighs
🍗 3 Tbsp Avocado Oil
🍗 2 Garlic Cloves, minced
🍗 1/2 lime, Juiced
🍗 1/4 tsp Salt
🍗 1/8 Pepper
🍗 1 1/2 Tbsp Dan-O's Original Seasoning (for added spice use their Chipotle seasoning)

1️⃣ Combine all of the ingredients.
2️⃣ Marinade the chicken in the mixture, cover and refrigerate for 30 minutes.
3️⃣ Heat the grill on medium heat. Grill each side for 8-10 minutes undisturbed or until internal temperature reaches 165°F.
4️⃣ Serve with grilled veggies of your choice.
5️⃣ Enjoy!
