Simple perfection. 🌼🐟

Do you have days where you need to halt and take a step back? I certainly do.

I feel like days run together and we're always on the go. But quick meals doesn't have to be slop slapped together or overly complicated. Sometimes simplicity can be pure perfection.

This Lemon Tuna Pasta was made in under 15 mins and it doesn't skimp on flavor thanks to @starkistcharlie tuna creations. The perfect fuel good, feel good meal.

Here's how it's done:

🍝 8oz Spaghetti, cooked
🍝 ½ Cup Pasta Water
🐟 2 2.6oz Packets of Tuna Creation, flavor of your choice (I used Herb & Garlic)
🍝 2 Tbsp Avocado Oil
🍝 1 Lemon, zested and Juiced
🍝 ¼ Cup Capers
🍝 2 Tbsp Parsley, Chopped
🍝 Handful of Mushrooms, Optional (I used Golden Oyster Mushrooms)
🍝 2 Tbsp Parmesan, shredded or shaved
🍝 Salt and Pepper, to taste

We have this dish quite often for lunch which but to keep it interesting, Iswitch up the tuna creation flavor! So needless to say, I like to keep our pantry stocked up with these packets.

Donut Worry...Be Happy! 😃🍩🩷

It's National Donut Day!

And in our house, we celebrated with these little heavenly morsels...Ube Cake Donuts with 3 different glazes: Dragonfruit, Chocolate and Vanilla.

Which would you be sinking your teeth into?

Here's the quick lowdown on the bakes goodies:

🍩 1¼ Cups All Purple Flour
🍩 1¼ tsp Baking Powder
🍩 ¼ tsp Salt
🍩 ¼ Cup Sugar
🍩 3 Tbsp Light Brown Sugar
🍩 4oz Ube Halaya
🍩 3 Tbsp Unsalted Butter, softened
🍩 ½ Cup Whole Milk
🍩 1 Egg, Room Temp
🍩 1 tsp Ube Extract (i love @halopantry )

1️⃣ Preheat oven to 400°F
2️⃣ Combine dry ingredients in large bowl
3️⃣ In a separate bowl mix ube, sugars and butter on medium speed until smooth and fully blended
4️⃣ Then add egg and extract
5️⃣ Fold in dry ingredients and milk slowly. Careful to not over mix.
6️⃣ Grease your cooking pans and fill cavity 3/4 full
7️⃣ Bake for 6-8 mins or until toothpick comes out clean
8️⃣ Enjoy!

Just paws-ing your feed with these Mini Bear Bánh Mì Burger Slider Wraps! 🐾 🍔

Boy that was a handful to say but you'll definitely want to keep your hands full with these bánh mì burgers. It's National burger month! This is my contribution to the @crazychewyfun Burger theme for May.

These little guys are juicy and flavorful.

🍔 1 lb Ground Meat of your choice

Marinade:
🍔 2 Garlic Cloves, minced
🍔 1 Small Shallot, minced
🍔 1 Tbsp Fish Sauce
🍔 1 Tbsp Oyster Sauce
🍔 1/4 Cup Brown Sugar
🍔 2 Tbsp Water

Assemble:
🍔 Tortilla Wrap
🍔 Yum Yum Sauce or Sriacha Mayo
🍔 Lettuce
🍔 Tomato
🍔 Grilled Burger Patties
🍔 Cucumber
🍔 Carrot & Daikon Pickles
🍔 Cheese

Crunchy meets classy. 🍓✨

@ohcrisp.co is not your average freeze dried fruit snack. It's exotic, all natural, crispy and delicious and many of the fruits are whole. There's two mixes available Classic and Exotic. Honestly, you can't go wrong with either. With 16 different fruits, the fun is unstoppable.

I setup a fun snacking charcuterie with some cheese, crackers and pretzels. The vibrant, crispy fruit like dragonfruit, mamgo, coconut, figs, strawberries, lychees and more were a colorful showstopper that little hands couldn't keep away.

3-course Meal in 30 mins? 💪

Sounds ridiculous right? Especially enlisting the help of a 4yo. But nope, we got this meal prepped, cooked and on the table in 30 mins no joke!

Thanks to @blueapron they have everything you need to make a family style meal easy and possible! All of the ingredients are measured out for you, making minimal prep so easy.

And because everything was measured out, it made it less stressful to let Atlas be "helpful" in the kitchen.

We made:

🥦 Roasted Broccoli & Calabrian Honey.
Sweet and salty umami. Never loved broccoli so much in my life.
🧀 Baked Gnocchi Mac & Cheese.
Crowd favorite. Cheesy, hearty and so flavorful...we added extra cheddar because you can never have too much cheese.
🥩 Grass Fed Flamk Steak.
The steak was just a typical prepared steak but that steak sauce was 🔥 It made all the difference with this dish.
